French Plums Cake With Hazelnut Crumble

French plums and hazelnut, this is a cake that really celebrates the season. Enjoy a slice with your mid-morning coffee or serve it warm for dessert. French plums include Reines-Claudes, Mirabelles, Quetsch plums, Ente plums, and many more besides. You can find many different colors for a rainbow cake!

Preparation

Preheat the oven to 325 °F. Prepare the crumble: combine 3,3 oz of flour, 3,3 oz of brown sugar, 3,3 oz of ground hazelnuts and 3,3 oz of softened butter in a bowl. Combine the ingredients with your fingertips until you obtain a sandy crumble.

Prepare the cake batter. Remove the pulp from the vanilla pod. Cut the plums into quarters.

In another bowl, whisk 2 eggs with the brown sugar. Add 1 fl oz of milk and the vanilla pulp, and mix. Add 3.2 oz of melted butter. Add 8.8 oz of sifted flour and ½ a sachet of baking powder. Mix vigorously and then add the plums. Gently fold them into the batter. Pour everything into a greased cake tin.

Arrange the crumble mixture on top. Add a handful of crushed hazelnuts.

Bake for about 1 hour at 325°F. Check whether the cake is done by sticking the tip of the knife into the center.
