French Crème Brûlée

Crème Brûlée is one of France's most iconic desserts, featuring a silky vanilla custard topped with a thin layer of crisp, caramelized sugar. Elegant yet surprisingly simple, this timeless French dessert is a favorite for café gourmand, dinner parties... or whenever you want to end a meal with a touch of French indulgence!

 

A true classic of French pâtisserie, Crème Brûlée is instantly recognizable by its signature caramelized sugar crust, which cracks satisfyingly under a spoon to reveal a rich, creamy vanilla custard beneath. Translating to "burnt cream" in French, this beloved dessert has been enjoyed for centuries, though its exact origins are still debated. Today, you'll find Crème Brûlée on dessert menus throughout France, often served as part of a café gourmand, a traditional French dessert experience pairing an espresso with a selection of bite-sized pastries and sweets, from canelés to mini tarte Tatin.

 

A great Crème Brûlée begins with just a few high-quality French ingredients. Rich French crème fraîche creates the custard's smooth, velvety texture, while Tahitian vanilla from French Polynesia adds delicate floral notes with subtle fruity aromas. A sprinkling of cane sugar from Guadeloupe transforms into the dessert's signature golden caramel crust, delivering the irresistible contrast between crisp caramel and luscious custard.

 

👨‍🍳 Cooking Tip: For an ultra-smooth custard, gently heat the cream without bringing it to a boil, then bake the ramekins in a water bath to ensure even, gentle cooking. Chill the custards thoroughly before sprinkling them with sugar and caramelizing just before serving, so the topping stays perfectly crisp while the custard remains cool, creamy, and silky.

Preheat the oven to 250°F

Slice the vanilla pod in two, lengthwise, and remove the seeds.

In a pan, simmer the cream with the vanilla pods and seeds.

Whisk the egg yolks and sugar together in a bowl until the mixture turns white.

After removing the vanilla pod, pour the hot cream over the mixture.  Mix well until you obtain a uniform mixture.

Place 4 ramekins in a baking tray and pour water around them. Pour the mixture into the 4 ramekins

Bake in the bain-marie for 30 minutes.

Leave to cool, then sprinkle brown sugar over the tops. Caramelize the sugar with the blowtorch and enjoy straightaway!

Crème Brûlée pairs beautifully with sweet wines such as Sauternes or Monbazillac, whose honeyed notes complement the caramel and vanilla. For a lighter pairing, serve with a glass of Champagne or a sparkling Crémant, whose freshness balances the richness of the custard.
