Ceasar salad with Chicken and Herbes de Provence

A perfect meal in just 15 minutes! Beautiful, meaty chicken fillets are served on a crisp green salad with bread croutons and Comté cheese (for a change from Parmesan). You can almost hear the crickets chirping in this salad with Provençal herbs!

Ingredients For

  • Red Label chicken
    Landes Free-Range Chicken PGI Label Rouge
  • Butter
    Charentes-Poitou Butter PDO
  • 4 slices
  • x 1
  • Comte cheese
    Comté PDO
  • 2 tbsp
  • Herbs of Provence Label Rouge
    Herbes de Provence Label Rouge
  • x 1
  • 1 clove
  • PGI Burgundy mustard
    Burgundy Mustard PGI
  • wocestershire
    Worcestershire sauce
    2 tsp
  • 2 tbsp
  • 0.50 Lemon

Preparation

Combine the olive oil and herbes de Provence. Brush over the chicken breasts and fry until golden brown. Season with salt during cooking. Leave to cool and cut into slices.

Cut the slices of sandwich bread into cubes. Heat a frying pan with the butter. When it starts to foam, brown the bread cubes. Set aside.

Peel and finely chop the garlic clove.  
Prepare the sauce by mixing the egg yolk with the mustard. Add the Worcesterhire sauce and lemon juice. Whisk and add the chopped garlic clove and grated cheese.

Wash the salad, spin-dry and cut into large chunks. Arrange in a dish. Add the bread croutons. Shred the Comté and add to the dish.  
Serve with the sauce and enjoy, bon appétit!
