Burgundy Mustard PGI (Moutarde de Bourgogne in French) is known for its strong to extra-strong flavor profile. It is made from locally grown mustard seeds combined with a mixture of water, at least 25% Bourgogne PDO white wine, salt, sugar, and spices. Unlike other mustards, it uses white wine instead of vinegar, imparting a unique flavor that sets it apart from traditional Dijon mustard.

The PGI designation ensures that Burgundy Mustard is the only mustard that can authentically claim its geographic origin and the provenance of its ingredients. The combination of ancestral savoir-faire and the region's ideal climate, characterized by dry, sunny summers and potash-rich soils, contributes to the exceptional quality of the mustard seeds used.

 

Historical Significance

Burgundy Mustard's reputation for excellence dates back to the 16th century. Its quality and fame grew even more in the 17th century with the establishment of a mustard producers' corporation. However, as the condiment gained popularity, production spread across France under the generic name "Dijon mustard." The shift in the 20th century towards colza and sunflower farming led to a decline in local mustard seed production, necessitating imports. It wasn't until the 1990s that mustard seed farming was revived in the Côte d'Or region, and in 2009, Burgundy Mustard received its PGI certification.

While both Burgundy Mustard and Dijon Mustard have roots in the Burgundy region, Burgundy Mustard PGI distinguishes itself through its guaranteed French origin and the use of wine from Burgundy.
