Chausson aux Pommes, literally meaning "apple slippers" in French, is one of the most beloved pastries in France. A staple of French viennoiserie, they are found in boulangeries across the country and are a favourite treat for children and adults alike. The origins of Chausson aux Pommes date back several centuries, with early versions of fruit-filled pastries appearing as far back as the Middle Ages. Over time, French pastry chefs refined the recipe using laminated puff pastry, giving rise to the light, flaky turnovers we know today. 

  

A true everyday classic, Chausson aux Pommes is closely linked to the French tradition of goûter, the French afternoon snack typically enjoyed around 4pm. This daily ritual often features a simple sweet treat picked up from the local bakery and is especially popular with children after school, while remaining a cherished habit shared across generations.   • 2 rolls (approx. 500g)

  • Salted Butter Caramel

  • 1 (for glaze)
  • 10 ml (for glaze)

Preparation

Peel and core the apples and cut into small cubes. Brown them in the butter with the sugar and cinnamon for 5 to 7 minutes, until they are soft. Leave to cool.

Preheat the oven to 180°C. Cut the puff pastry into 12 x 20 cm rectangles. Score thin strips along the outer thirds of each side, leaving a strip in the middle intact.

Fill the centre of each rectangle with apple compote and a generous drizzle of salted-butter caramel. Fold and plait the strips over the top to form the turnover. Glaze with egg wash, made with the yolk and milk.

Bake for 20 to 25 minutes until it’s a lovely golden-brown colour. Serve warm with extra salted-butter caramel on the side.
