Apple, potato, and onion röstis

Peel the potatoes, apple, and onion. Grate all three. Squeeze the mixture in between your hands to remove as much liquid as possible. Place the mixture in a large bowl.
Rinse the chives, then chop them.
Add the eggs and flour to the salad bowl and stir them together to thicken. Add salt and pepper. Add the chives and mix again.
Pour the oil in a large skillet. Heat. Ladle the mixture into the skillet. Flatten into fritters. Turn the fritters from time to time until they are cooked fully and evenly. Remove from the skillet once they are golden brown and still soft in the center.
Add a pinch of salt and serve.
