
🤔 Did you know? Sainte-Maure de Touraine is a soft goat's milk cheese with a natural rind. It is easily recognisable by its ‘buchette’ shape. Sainte-Maure de Touraine has the distinctive feature of having a rye straw running through it to certify its origin. The straw is engraved with the name of the appellation and attests to the origin of the cheese.

Toast the bread slices in a toaster or bake them for 5 to 10 minutes in an oven preheated to 180°C. They should be golden brown and crispy.

Cut the goat's cheese log into half-centimetre slices. Cut the figs into 4 or 8 pieces lengthwise.

On each slice of bread, place a few rocket leaves, a slice of roughly chopped cured ham, two slices of Sainte-Maure cheese and a few fig quarters.

Drizzle with a little honey, season with pepper and enjoy immediately.
