Preparation

Peel and chop onions. Melt butter in a frying pan, add onions and sauté for a few minutes. Season with salt and pepper. When they start to turn golden, sprinkle with sugar and continue cooking, stirring regularly. When caramelized, keep warm.

Prepare the aioli sauce: place an egg yolk in a bowl and add the mustard. Season with salt and pepper. Whisk briskly, then drizzle in the oil while continuing to whisk the mixture.

Peel and mince garlic, add to sauce and mix.

Cut buns in half. Set aside.

Heat a frying pan with half the butter and cook the meat. Season with salt and pepper.

Add cheese to each ground steak and cover with a lid.

In another pan, heat remaining butter and lightly brown buns.

Spoon a little sauce over each bun base, then place a steak on top. Cover with caramelized onions and add the salad. Place the other half of the bun on top and add a spade. Serve immediately.
