Preheat your oven to 392°F.

In a saucepan, bring the water, butter, and 1 teaspoon of salt to a boil.

Remove from the heat, add the flour all at once, and mix vigorously over low heat for 1 minute to dry the dough slightly.

Let the mixture cool briefly, then beat in the eggs one at a time until fully incorporated.

Add the grated cheese (reserving a few tablespoons for topping), nutmeg, salt, and pepper. Mix until smooth.

Using a piping bag or teaspoons, form small mounds of the dough on a baking tray with parchment paper.

Brush each gougère with egg yolk, then sprinkle some grated cheese on top.

Bake for 25 minutes, until golden and puffed.
