Baked Brie en Croûte with Fig Jam and French Walnuts

By Myriam Baya, Food blogger

Baked Brie en Croûte is an easy French-inspired appetizer made with French Brie wrapped in puff pastry. Perfect for sharing at dinner parties, festive gatherings or as part of a French-style apéritif.

Baked Brie en croûte is a delicious centrepiece for sharing, whether you’re hosting an apéritif or preparing a festive cheeseboard. This easy baked Brie recipe wraps creamy French cheese in puff pastry (called pâte feuilletée in French), topped with sweet fig jam and French walnuts for a delicious sweet-and-savoury combination. Once baked, the pastry turns beautifully golden while the cheese becomes soft and gooey. Serve it warm with crusty baguette, crackers or fresh fruit.

Brie de Meaux PDO is a wonderful choice, but if you can’t find it, a good French Brie from the supermarket works just as well. You could also use Coulommiers or try a baked Camembert en croûte instead. Choose a small, round cheese, as in this recipe, or use two triangular pieces to create a rectangular version. Whichever cheese you choose, check the packaging carefully to make sure it is actually made in France, as French-style branding doesn’t necessarily mean French origin! It’s a simple way to bring a little French flair to your table.

Preparation

1

Preheat the oven to 220°C (200°C fan). Unroll the puff pastry onto a baking tray, keeping it on its baking paper. Prick the pastry all over with a fork.

2

Place the cheese in the centre of the pastry. Fold the edges up around the cheese, pleating the pastry as needed and leaving the top of the cheese uncovered. Brush the pastry with the beaten egg, then place in the freezer for 15–20 minutes to chill.

3

Bake for 20–25 minutes, until the pastry is deep golden and crisp.

4

Transfer to a wire rack and leave to rest briefly. Spoon the fig jam over the exposed cheese, then scatter over the toasted walnuts and fresh thyme. Finish with a drizzle of honey and a pinch of fleur de sel. Serve warm with crackers or slices of crusty baguette.

Pair with

Pair this baked Brie en croûte with a French sparkling wine such as a Vin de France pét-nat or a Crémant de Loire, whose fresh acidity and delicate bubbles balance the creamy cheese.
