French Lentils Salad with Fourme d'Ambert

Preparation

Cook the lentils as instructed on the packet. Once cooked, drizzle with olive oil and season to taste.

Prepare the croutons: cut the slices of country-style bread into small cubes. Heat a frying pan with oil and a whole clove of garlic, coarsely crushed. Add the bread cubes, season with salt and leave to brown, stirring regularly. Set aside.

Cut the Fourme d’Ambert cheese into large cubes. Peel the pear and cut into cubes.

Prepare the vinaigrette by mixing the olive oil, vinegar and mustard.

Place the lentils in a transparent jar, followed by the pear, Fourme d’Ambert cheese and lamb’s lettuce. Keep the vinaigrette in a separate jar and season just before serving. Shake to mix, and enjoy!
