Preparation
1
Stuff the Saint-Félicien: using a knife, slice the Saint-Félicien in half lengthwise. Fill it gently with chutney, pressing gently so that the filling sits inside. Then top the Saint-Félicien with some nuts, a few thin slices of pear and a drizzle of honey.
2
Make the Rocamadour Tower: Layer the top one Rocamadour with one teaspoon of jam, then stack another Rocamadour on top and repeat. Add a spoon of jam on top of the Rocamadour tower.
3
Place each cheese portion on a small serving plate or platter. Serve immediately at room temperature to preserve flavour.
