Scrambled eggs with caviar

For a simple but exquisitely refined Christmas starter, try this recipe for scrambled eggs with caviar! The scrambled eggs are prepared with butter and cream, and served with French caviar... Sensational! If you have any caviar left over, you can also try this recipe on New Year’s Eve; or just keep it for yourself... why not?!

Slice the top off the eggs two-thirds of the way up with a serrated knife. Remove the top and pour the eggs into a bowl.

Beat the eggs and season with salt and pepper.  Cut the brioche slices into soldiers.

Melt half the butter in a pan and fry the brioche. Remove from the heat and add the remaining butter.

When it is melted, add the beaten eggs and keep stirring and turning them. When the eggs are creamy, stir in the cream and chopped chives, then remove from the heat.

Divide the eggs into the shells and place a small spoonful of caviar on top.  Serve with the brioche soldiers.
