Ratatouille is essentially a vegetable dish from the South of France, especially the Nice region. It contains eggplants, tomatoes, zucchini, onions, bell peppers and garlic. Each vegetable is first cooked until it is soft and sweet. A real treat!
Peel and cut the onions into half-slices. Peel and slice the garlic.
Cut all the vegetables into pieces, these can be as chunky as you like.
Heat a little olive oil in a cooking pot. Add the garlic and onion and cook until they become translucent.
Then add the eggplant, bell peppers, zucchini and last, the tomatoes. Add the bouquet garni. Season with salt and pepper, cover and leave to simmer for approximately 30 minutes.
