Peel and slice onions. Heat a frying pan with the oil. Place onions in pan and sauté over medium heat for 5 minutes, until soft. Add the brown sugar and maple syrup. Continue cooking for 20 minutes, stirring regularly. Season with salt and pepper.

Meanwhile, heat the buns and sausages in a pan of water. Place a thin layer of mustard on the base of the buns, add caramelized onions, and place a sausage and a layer of onions on top.

Mix the ketchup with the Espelette pepper and sprinkle over the sausages. Serve immediately.
