Carefully wash and dry the apples. Insert wooden sticks vertically into each apple.

In a heavy-based saucepan, pour the sugar, water and glucose syrup.

Heat without stirring until the mixture reaches 150°C. Add 1 or 2 drops of red food colouring and swirl the pan gently (don’t use a whisk).

Dip each apple in the hot syrup, turning slowly to get an even coating (lift and allow the excess to drip into the pan).

Place onto baking paper. Quickly twirl the bottoms of the apples in the crushed hazelnuts.

Leave to harden at room temperature for about 30 minutes.
