Strawberry & Tomato Gazpacho

Our creative gazpacho recipe offers a fresh and creative take on the traditional Spanish cold soup, blending the natural sweetness of French strawberries with the balanced acidity of ripe tomatoes. Served chilled, it is a perfect dish for hot summer days, combining lightness, colour and bold flavour in every spoonful.

From the delicate and elongated Gariguette to the juicy Ciflorette, the rounder Cléry, or the intensely aromatic Mara des Bois, known for its wild strawberry notes, these varieties bring depth and nuance to the dish. Paired with ripe French tomatoes, they create a beautifully balanced and refreshing combination.

Preparation

Hull and wash the strawberries and wash the cherry tomatoes. Peel the shallot and the clove of Lautrec pink garlic.

Blend together the strawberries, cherry tomatoes, shallot, garlic, olive oil, sherry vinegar and sugar. Season generously, then pass through a fine sieve to obtain a smooth, velvety texture. Adjust the seasoning.

Refrigerate for at least one hour. Serve chilled in glasses or bowls, with a drizzle of olive oil, a pinch of Guérande sea salt and a few basil leaves.
