Cut 4 slices of bread. Set aside.

Prepare béchamel-style sauce: melt butter and add flour all at once. Mix and cook for 2 minutes to make a roux. Pour in the cream and season with salt and pepper. Continue cooking until the sauce thickens.

Grate cheese and add to sauce. Set aside.

Butter the bread slices and turn them over (butter side out). Spread bread slices with a thin layer of mustard.

Cover with béchamel sauce. Place a halved slice of white ham on each slice of bread. Add slices of Emmental cheese to two slices of bread.

Close sandwiches and place in a frying pan. Heat over medium-low heat. Turn over when golden and continue cooking the other side.
