Ham and cheese croissant sandwich

Preparation

Preheat the oven to 180 °C.

Prepare the béchamel sauce: in a saucepan, heat the milk with the rosemary sprig over a low heat. Cover and set aside. In another saucepan, melt the butter over a low heat. Add the flour all at once and mix well until you obtain a roux. Remove the rosemary sprig and pour the milk over the roux while whisking. Leave on a low heat until the mixture thickens. Cover with cling film and set aside.

Peel the red onions and set aside a few slices.

Fry your eggs.

Cut the croissants in half. Spread a large spoonful of béchamel sauce, add the grated Emmental cheese and an egg. Add a few slices of red onion and season to taste. Close the croissant, sprinkle with more Emmental cheese and bake for 3 minutes to brown. 

Serve warm.
