Provence-Style Tapas with Olive Oil and Fresh Tomatoes
This is the perfect way to appreciate the flavor of your raw PDO olive oil!
Lightly toast the slices of bread.
Rinse and peel the tomatoes. Remove the seeds. Cut the tomatoes into small cubes. Set aside in a bowl. Add salt and pepper.
Pour the olive oil onto the entire surface of each slice of toast.
Add a thin layer of crushed tomatoes on top.
In a plate, cut each slice into 2 or 3 sections and eat immediately.
Version without tomatoes: lightly rub a garlic clove over each slice of toast before adding the olive oil.
Rosé de Provence and chilled lemon water.
