Provence-Style Tapas with Olive Oil and Fresh Tomatoes

This is the perfect way to appreciate the flavor of your raw PDO olive oil!

Ingredients For

  • Olive oil and blue background
    Oil & oilseeds
    PDO Vallée des Baux-de-Provence Olive Oil
    60 ml See the article
  • 4 large slices
  • x4

Lightly toast the slices of bread.

Rinse and peel the tomatoes. Remove the seeds. Cut the tomatoes into small cubes. Set aside in a bowl. Add salt and pepper.

​​​​​​Pour the olive oil onto the entire surface of each slice of toast.

​​​​​​Add a thin layer of crushed tomatoes on top.

In a plate, cut each slice into 2 or 3 sections and eat immediately.

​​​​​​Version without tomatoes: lightly rub a garlic clove over each slice of toast before adding the olive oil.

Rosé de Provence and chilled lemon water.
