The day before: bring a saucepan of unsalted water to the boil. Add the eggs and cook for 6 minutes. Cool the eggs immediately after cooking.

Shell the eggs. Peel the ginger and garlic, and chop roughly. Place the eggs, ginger, garlic and soy sauce in a bowl. Add enough water to cover the eggs and refrigerate for at least one night.

On the day: bring a saucepan of salted water to the boil. Add the asparagus and cook for 4 to 5 minutes.

Slice the kumquats crosswise and roughly chop the coriander.

Serve the asparagus with salt, pepper and a drizzle of olive oil. Place one egg on each plate and sprinkle with coriander and slices of kumquat.
