Chestnut snack

French chestnut paste has a natural brown color, making it ideal for pastry snack. Chestnut is an iconic product among foodies, symbolizing the love story between a region and its produce. This dessert is inspired of a real chestnut, made with bean paste  and chestnut paste.

Spread out a piece of plastic wrap, divide the boiled chestnuts, and wrap them with about 20g of marron paste. Do not knead the marron paste, but use its original consistency.

  • Spread about 20g of koshi-an (sweet red bean paste) and wrap it round.

  • Shape into a chestnut with the tip slightly pointed.

  • Put a poppy seed on the butt (opposite the pointed end) and you're done!
