Fromager d’Affinois and Porcini Mushroom Grilled Cheese

This is no ordinary grilled cheese. Meaty slices of fresh porcini cooked in garlic butter join the mild and creamy Fromager d’Affinois cheese between thick slices of country bread.

Heat the oven to 375˚F.

    Heat a large ovenproof sauté pan over medium-low heat. Melt the butter with the garlic. When the butter starts to brown, add the mushrooms and sear until golden on each side. Set aside on a tray lined with paper towels.

    Meanwhile, spread both sides of each bread slice with the mayonnaise.

    Divide the cheese and mushrooms evenly on 2 slices of bread, and close with the remaining 2 slices of bread.

    Place the sandwiches in the pan used for the mushrooms and cook until the cheese is about halfway melted. Then use a spatula to flip the sandwiches over and then put the pan in the oven. Bake until both sides of the sandwiches are crusty, and the cheese is melted, about 8 minutes.

    Remove from the oven. Cut the sandwiches diagonally with a serrated knife and serve.
