Mallou Roque opens the doors of her family's salting workshop. The Roque family has been in business since 1870 and the tradition has been passed down from generation to generation.
Mallou, her brothers and her children work in the workshops, carrying on the tradition : today, they tell us about the preparation and preservation of the anchovies.
